Okayu is a thick rice porridge; in Japan it is commonly given to people with a cold or other kinds of illness, because it's easy to eat and digest. Okayu is also one of the first food given to infants.
While I am neither ill, nor an infant, I love okayu and it is so simple to make!
This recipe is for a sweet okayu that I sometimes cook for breakfast :)

Ingredients White rice (short grain) Sugar (although I use artificial sweetener) Vanilla extract Cinnamon Water | Ratios: Water : Rice = 5:1 Rice : Sugar = 2:1 |
Method
- Empty your rice and add 1 teaspoon of vanilla extract.
- Add water and bring to boil.
- Once boiling, decrease heat to simmer.
- After 10-15 minutes add sugar and stir.
- Continue to simmer until rice is thick and fluffy.
- Serve into rice bowls and add a sprinkling of cinnamon.
